Slow cooker beef tacos
Kids love this meal and the good news is that it’s easy and delicious. Enjoy!
2-lb boneless chuck roast, cubed
1 tsp. salt
1 Tbsp. vegetable oil
1 Tbsp. chili powder
1 6-oz can tomato paste
2 cups beef broth
1 small white onion, chopped
1 8-oz. can tomato sauce
1/4 cup chopped fresh bell pepper
1 tsp. ground cumin
1/2 tsp. pepper
flour or corn tortillas
Garnish: cheese, sour cream, cilantro, tomatoes
Sprinkle beef with salt. Cook beef, in batches, in Dutch oven over medium heat for 5-7 minutes or until browned on all sides. Remove beef, reserve drippings in Dutch oven. Add 1 Tbsp. chili powder to Dutch oven, stirring constantly. Cook 1 minute.
Stir in tomato paste stirring constantly for 2 minutes. Add 2 cups beef broth, return beef to Dutch oven and stir.
Place beef mixture in slow cooker. Add onion and next 4 ingredients. Cook on high for 4 hours or low for 6 hours or until beef is tender. Serve with warm tortillas and garnishes.
